Mexican Hot Chocolate

Curl up on the sofa with this hot yummy....drink!


Ingredients

2 cups unsweetened almond milk (homemade or store-bought)50 grams 55-60% non-dairy dark chocolate (about 1/4 of a bar)1-2 tablespoons pure maple syrup, to taste1 tablespoon unsweetened cocoa powderPinch of cayenne pepper, to tasteDash fine grain sea salt, to taste


Directions

  1. Break up the chocolate into chunks. In a medium pot, add the almond milk and chocolate pieces. Increase heat to medium-low. Whisk occasionally until all of the chocolate is melted.
  2. Whisk in the maple syrup, cocoa powder, cayenne, and salt until super smooth. Heat over medium-low and remove from heat just before it simmers. If you can't get the hot cocoa smooth enough by whisking you can transfer it into a blender and blend until smooth.
  3. Adjust the sweetness to taste, if necessary. Serve and enjoy!
