Sour Kream

Ingredients: 

1 cup of raw cashews
1/2 cup water
2 tablespoons lemon juice

Directions:

  1. Combine all ingredients in a high speed blender and process until smooth and creamy.  Scrape down the sides of the blender a couple of times to get all of the cashew pieces.
  2. Store in an airtight container in the fridge.  Will keep about 1 week.
