Cheezy Broccoli Soup

Soy Free
Serves 4 to 6
Ingredients:
1/4 cup water
1 medium onion, coarsely chopped
1 medium russet potato, finely chopped or shredded
1 pound broccoli, coarsely chopped
4 cups vegetable broth
salt and pepper to taste
1/2 cup nutritional yeast
1/4 cup almond butter
1 tablespoon lemon juice
1 teaspoon Dijon mustard
2 cups plain unsweetened almond milk
Directions:
- In a large pot, head the water over medium heat. Add the onion, cover and cook until softened, about 5 minutes. Add the potato and broccoli, and stir in the broth. Season with salt and pepper, to taste. Bring to a boil, then reduce the heat to low. Simmer uncovered, until the vegetables are tender, about 20 minutes. Use a slotted spoon to remove 1/2 of small broccoli florets, and set aside.
- Add the nutritional yeast, almond butter, lemon juice and mustard to the soup.
- Use an immersion blender or regular blender to puree the soup.
- Stir in the almond milk, then taste and adjust the seasonings, if necessary. Reheat the soup over low heat until hot. To serve, ladle soup into bowls, garnish with the reserved broccoli florets. Serve hot.

ReplyDeleteI just made this and it is absolutely wonderful! ! I love knowing that there isn't one bad ingredient in it. The only modification I made was that I used 1 cup almond milk instead of 2 because the soup was already pretty thin. I used original reduced sugar because that's what I had on hand and it was fine. Definitely a new favorite in my house, thank you! !

I've always appreciated your tasty recipes & cooking and now I'm even happier that your recipes are plant-based whole foods recipes since that's what hubby prefers now and I like how i feel better too (more energetic & not weighed down).
ReplyDeleteIt's funny how you & i got into this healthy way of eating at about the same time 'cause i dabbled in it while Damian was gone since he said he wanted to eat like that when he got back and now that's how I try to mostly eat and i really like it! My overall health is definitely reaping the benefits!

Made it last night and I even got my husband to eat it. He hates broccoli but blended up he likes it!
